Very-berry Almond Coffee Cake
This will look like a lot of toping for one cake, but don’t worry add it all and it will bake into the batter and create a wonderful golden brown topping. You’ll love it!
Topping:
2 1/2 cups flour
2/3 cup brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup of sliced almonds, toasted
1/2 cup unsalted butter, room temperature
Cake:
1 1/2 teaspoons of grated lemon zest
1/2 cup granulated sugar
1/2 cup brown sugar
3 large eggs, room temperature
1 teaspoons of vanilla extract
1/2 teaspoon of almond extract
3/4 cup sour cream
3/4 cup buttermilk (room temperature)
2 1/2 cups of flour
1 tablespoon baking powder
1 teaspoons of baking soda
Filling:
6 oz blueberries, frozen
2/3 cup of blueberry jam
Preheat oven to 350º F.
Coat a non stick Angel Food Cake Pan with a removable bottom with non stick cooking spray and set aside.
To make the topping in a small bowl combine flour, brown sugar, cinnamon, salt, and toasted almonds. Toss to combine. Using a pastry cutter (or a fork) cut in butter until mixture resembles coarse crumbs. Set aside.
To make the filling combine thawed blueberries and jam, stir and lest sit for 15 minutes.
In a medium sized bowl stir together flour, baking powder, baking soda, and salt. Set aside.
In a small bowl combine buttermilk and sour cream and stir until mixture is uniform.
In the bowl of an electric mixer fitted with the paddle attachment cream butter, sugars, and lemon zest until pale and fluffy. Add eggs one at a time scraping down bowl after each addition. With mixer on low speed mix in vanilla and almond extract. Add dry ingredients alternating with buttermilk mixture in batches and finishing with dry ingredients.
Spoon half of batter into prepared baking pan. Next with berry filling create a ring of filling over the batter trying not to let in touch the sides of the pan. Top with remaining batter and sprinkle topping over top of batter.
Bake at 350 º for approximately 65 - 70 minutes until golden brown and a wooden skewer inserted into the center comes out clean and dry.
